The nutritious combination of gelatine and bone marrow seeped into it and decadent taste that is borne out of its simmering with spices is what makes Paaya (Kharode) such an irresistible dish.
This small stall is run by a gentleman who once used to sell mutton Paya out of a street stall at Pusa Road in Karol Bagh. Soon word about the scrumptious taste of his food got around and now the man sells the same decadent dishes like Maghaz(Brain), Kaleji, etc. Although, the paaya is still priced quite moderately and people still flock here in large numbers to get a bite of his zesty Kharode ka Soup.
